2lb Ground Leg Steaks of Muntjac
Bunch of Cilantro
4 fat cloves of garlic
3 tins chopped tomatoes
Red wine vinegar
Sprig of rosemary
Add the ground Muntjac to a bowl and add in the parmesan, season well with black pepper and sea salt then grate in the chilli for spice. Roughly chop a large bunch of Cilantro and add to the mix. Grate in the garlic.
Mix together well with your hands, to make sure everything is evenly mixed. Then work the mixture well into balls.
In a blender mix together the shallots, tinned tomatoes, garlic, chilli, coriander and red wine vinegar to a smooth sauce with no bits.
Add the blended mix to a large pan and add a sprig of rosemary. Place the prepared meat balls into the pan and simmer on a low heat for around 45 minutes
Serve the meatballs with grated parmesan.
